2 cups rolled oats, old fashioned
1/2 cup chopped and divided pecans
1/4 cup pure maple syrup + additional for serving.
1 tsp. baking powder
1 1/2 tsp cinnamon powder
1/2 tsp fine-grained sea salt
2 cups almond milk, unsweetened
1 large egg or 1 tsp flaxseed
2 tbsp coconut oil, melted
2 tsp. pure vanilla extract
2 sliced ripe bananas
- Spray cooking spray in an 8 by 8 inch square baking dish and preheat the oven to 375°F.
- Dry ingredients: Combine the oats, half the pecans, cinnamon, salt, and baking powder in a large bowl.
- Add in wet ingredients: Add in the milk, egg, coconut oil, vanilla, maple syrup, , and bananas. Stir well to combine.
- Pour the oatmeal mixture carefully into the prepared baking dish.
- Place the rest of the pecans on top.
- 35 to 40 minutes of baking should be plenty to achieve a nicely brown top. Take out of the oven, then allow to cool for a while. portion, then dish. If you like it a little sweeter, drizzle some maple syrup over each serving.
