Maple Pecan Baked Oatmeal

This baked oatmeal with chopped pecans and pure maple syrup is mildly sweetened. Elegant enough to serve for brunch but also ideal for meal preparation.

With baked oatmeal, you simply can’t go wrong. You may create a variety of mouthwatering flavors by varying the spices, fruit, nuts, and sweetener in this recipe. 

How to Freeze Baked Oatmeal

Baking oats freeze incredibly well. Just wait until the cooked oatmeal has cooled fully before dividing it into servings. Put each serving in a freezer-safe bag or container before freezing it. When you want some baked oatmeal, simply remove the frozen oatmeal’s packaging or cover it, then reheat it in the microwave for a few minutes, or until thoroughly heated.

healthy baked oatmeal recipe for breakfast – Anytime you want a warm, comfortable breakfast, try this baked oatmeal with maple and pecans!

Ingredients

  • 2 cups rolled oats, old fashioned

  • 1/2 cup chopped and divided pecans

  • 1/4 cup pure maple syrup + additional for serving.

  • 1 tsp. baking powder

  • 1 1/2 tsp cinnamon powder

  • 1/2 tsp fine-grained sea salt

  • 2 cups almond milk, unsweetened

  • 1 large egg or 1 tsp flaxseed

  • 2 tbsp coconut oil, melted

  • 2 tsp. pure vanilla extract

  • 2 sliced ripe bananas

Directions

  • Spray cooking spray in an 8 by 8 inch square baking dish and preheat the oven to 375°F.
  • Dry ingredients: Combine the oats, half the pecans, cinnamon, salt, and baking powder in a large bowl.
  • Add in wet ingredients: Add in the milk, egg, coconut oil, vanilla, maple syrup, , and bananas. Stir well to combine.
  • Pour the oatmeal mixture carefully into the prepared baking dish.
  • Place the rest of the pecans on top.
  • 35 to 40 minutes of baking should be plenty to achieve a nicely brown top. Take out of the oven, then allow to cool for a while. portion, then dish. If you like it a little sweeter, drizzle some maple syrup over each serving.
