Ingredients

  • 2 cups dried fruit: ½ cup dried apples, ½ cup prunes, ½ cup apricots, ¼ cup craisins
  • 6 cups boiling water
  • ½ cup cold water
  • 2 Tbsp potato starch
  • 3 Tbsp honey
  • 1 small cinnamon stick

Instructions

  1. Prepare the Fruit:
Rinse and drain the dried fruits thoroughly, then transfer them to a large soup pot along with the cinnamon stick.
  2. Hydrate the Fruit:
Pour 6 cups of boiling water over the fruit. Cover the pot with a lid and let it sit off the heat for 30 minutes to allow the fruit to rehydrate and release its flavors.
  3. Sweeten and Simmer:
After 30 minutes, add 2–3 tablespoons of honey, adjusting to taste. Place the pot on medium-high heat and bring it to a gentle boil. Reduce the heat to low and simmer for 5–7 minutes.
  4. Thicken the Kissel:
In a small bowl, whisk together 2 tablespoons of potato starch with ½ cup cold water until smooth. Slowly pour this mixture into the simmering pot while continuously stirring to prevent lumps.
  5. Finish and Serve:
Bring the pot back to a boil, then immediately remove it from the heat. Serve your Winter Kissel warm or chilled. For a clear juice-like drink, strain the fruit through a sieve, but keeping the fruit adds a delicious texture and flavor!
