Ingredients

  • 1 slice bacon, cut into ¼-inch strips
  • 1 teaspoon olive oil (optional, if bacon drippings are insufficient for sautéing)
  • ¼ cup chopped onions
  • 1 clove garlic, minced
  • ¼ teaspoon dried rosemary
  • ⅛ teaspoon coarsely ground black pepper
  • 1 (15.5-ounce) can white beans (cannellini), rinsed and drained
  • ¾ cup low-sodium chicken broth

Instructions

  1. In a 2-quart saucepan, cook the bacon over medium-high heat until crisp. Remove with a slotted spoon and set aside for garnish.
  2. If the pan has little bacon fat, add 1 teaspoon olive oil. Sauté the chopped onions for 3 minutes, stirring occasionally until softened.
  3. Add garlic, rosemary, and black pepper and cook for 1 more minute until fragrant.
  4. Stir in the drained white beans and chicken broth. Bring to a boil, then reduce heat and simmer for 15 minutes, stirring occasionally.
  5. Mash a few beans gently against the side of the pot to thicken the soup slightly.
  6. Serve: Ladle the soup into a bowl and top with the reserved bacon strips.

Tips

  • Use a potato masher or back of a spoon to gently mash some beans for a thicker, creamier texture.
  • Keep the bacon crispy by adding it just before serving.
  • If you prefer, cook the onions and garlic in all olive oil for a lighter version.

Variations and Substitutions

  • Replace bacon with turkey bacon or omit for a vegetarian-friendly soup.
  • Swap chicken broth with vegetable broth for a vegetarian or vegan version.
  • Add a handful of chopped kale or spinach for extra greens.
  • Season with thyme or sage instead of rosemary for a different herbal flavor.

FAQs

Q: Can I make this soup ahead of time?
A: Yes! Store in an airtight container in the fridge for up to 2 days and reheat gently on the stove.

Q: Can I freeze this soup?
A: Yes, freeze without the bacon garnish for up to 1 month. Reheat on the stove and add fresh bacon when serving.

Q: Can I use dry beans instead of canned?
A: Yes, soak and cook dry beans first, then proceed with the recipe. Adjust the broth slightly as cooked beans absorb more liquid.

Serving

Serve hot in a small bowl with the crispy bacon on top. Pair with crusty bread or a side salad for a complete, cozy meal.

Suggestions

  • Sprinkle freshly ground black pepper or grated Parmesan cheese on top for added flavor.
  • Add a splash of lemon juice before serving for a bright, fresh taste.
  • Serve with a slice of toasted baguette or garlic bread for dipping into the creamy soup.
