  • 2 large eggs
  • 1 Tbsp water
  • ¼ tsp salt
  • ¼ tsp ground black pepper
  • ¼ cup red onion, finely diced

  • ¼ cup red bell pepper, finely diced
  • ½ cup baby spinach leaves
  • ¼ cup shredded cheddar cheese

  1. Cook the Vegetables
    • Heat olive oil in a nonstick skillet over medium heat.
    • Add onion, mushrooms, and red bell pepper, seasoning with ¼ tsp salt and ¼ tsp black pepper.
    • Sauté for 3–4 minutes until softened.

  2. Prepare the Eggs
    • Wipe the skillet clean.
    • In a small bowl, whisk together eggs, water, and ¼ tsp salt until smooth.
    • Pour the egg mixture into the pan, spreading evenly to the edges. Cook for 1–2 minutes until the bottom is lightly browned.
  3. Assemble the Omelet
    • Place the sautéed vegetables on one half of the omelet.
    • Sprinkle shredded cheddar cheese over the vegetables.
    • Carefully fold the other half of the omelet over the filling.
  4. Serve
    • Slide the omelet onto a plate and serve immediately.
