Vegan Eggplant Sandwich

A smoky, tender, and flavorful vegan sandwich featuring roasted eggplant, fresh vegetables, and creamy vegan mayo. Perfect for lunch, picnics, or a quick plant-based dinner.

Ingredients

For the Sandwich:

  • 1 medium eggplant, peeled, sliced, and pre-soaked in lightly salted water for 30 minutes
  • 2 ciabatta buns or panini rolls
  • 4 Tbsp vegan mayonnaise
  • 1 tomato, sliced
  • ยฝ cucumber, sliced
  • ยฝ cup arugula (rocket leaves)

For the Marinade (Eggplant โ€œBaconโ€):

  • 1 Tbsp extra virgin olive oil
  • 1 Tbsp soy sauce (use tamari for gluten-free)
  • 1 tsp agave syrup or maple syrup
  • 1 tsp smoked paprika
  • ยผ tsp salt
  • ยผ tsp ground black pepper

Instructions

1. Prepare the Eggplant

  1. Preheat the oven to 360ยฐF (180ยฐC).
  2. Mix the marinade ingredients in a small bowl.
  3. Brush the marinade evenly over the eggplant slices.
  4. Arrange the slices on a baking sheet and bake for 20 minutes, or until tender and slightly caramelized. (Alternatively, shallow fry and pat dry on paper towels.)

2. Assemble the Sandwich

  1. Slice the ciabatta or panini buns in half lengthwise.
  2. Spread a layer of vegan mayonnaise on the bottom half of each bun.
  3. Layer the roasted eggplant slices, tomato slices, cucumber slices, and a sprinkle of salt and pepper.
  4. Top with arugula leaves and cover with the top half of the bun.

3. Toast (Optional)

  • Wrap the sandwich in foil and toast in a grill or panini press until slightly crispy.
  • Slice in half and serve immediately, or keep wrapped for work, a picnic, or later enjoyment.
