Ingredients
8 ounces uncooked pasta (I used fettuccine)
11 ounces Italian sausage, casings removed
3 cloves garlic, minced
1/2 cup chicken broth or dry white wine
1/2 teaspoon Dijon mustard
1 teaspoon flour
1 teaspoon lemon juice
1/4 cup sun-dried tomatoes
1 cup heavy cream or whipping cream
1.5 cups fresh baby spinach (loosely packed)
Fresh basil (small handful, torn or chopped)
Salt & pepper to taste
Freshly grated parmesan cheese (optional)
Directions
- Cook the pasta in salted water according to package instructions until al dente. Drain and set aside.
- In a skillet over medium-high heat, cook the crumbled sausage for about 5 minutes, stirring occasionally until browned. Once done, remove the sausage from the pan and set aside. If there’s excess fat, discard most of it.
- In the same pan, add the garlic, chicken broth (or white wine), Dijon mustard, flour, and lemon juice. Stir well, scraping up the flavorful brown bits from the bottom of the pan. Let it bubble for a couple of minutes to slightly reduce.
- Stir in the sun-dried tomatoes and heavy cream, allowing the sauce to cook for 2-3 minutes until it begins to thicken.
- Return the browned sausage to the skillet and let it simmer for a few minutes, letting the flavors combine and the sauce thicken further.
- Add the fresh basil and spinach, cooking for an additional minute until the spinach wilts into the sauce. Taste and adjust seasoning with salt and pepper as needed.
- Toss the drained pasta with the sauce until well coated. Serve immediately, garnished with freshly grated parmesan cheese if desired.
