For the Chicken:

  • 2 large chicken breasts, halved horizontally (about 1 ½ lbs)
  • 1 tsp fine sea salt, divided, plus more to taste
  • ½ tsp freshly ground black pepper, divided
  • ½ tsp garlic powder
  • 2 Tbsp light olive oil, divided
  • 1 Tbsp unsalted butter

For the Sauce:

  • 8 oz brown mushrooms, thickly sliced
  • ¼ cup sun-dried tomatoes, packed in oil, drained and chopped
  • ¼ cup green onion (green parts only), finely chopped
  • 3 garlic cloves, minced
  • 1 ½ cups heavy whipping cream
  • ½ cup Parmesan cheese, finely shredded
  • 2 cups fresh baby spinach

Instructions

1. Prepare the Chicken:

  • Heat a large, non-reactive skillet over medium heat. Add 1 Tbsp butter and 1 Tbsp olive oil.
  • Season the chicken with ½ tsp salt, ¼ tsp black pepper, and ½ tsp garlic powder.
  • Place the chicken in the skillet and cook for 3-5 minutes per side until golden and cooked through, reaching an internal temperature of 165°F. Remove the chicken from the skillet and let it rest on a cutting board. Slice into strips if desired.

2. Cook the Vegetables:

  • In the same skillet, heat the remaining 1 Tbsp olive oil. Add the sliced mushrooms and sauté for 5-7 minutes, stirring occasionally, until golden and the liquid has evaporated.
  • Stir in the sun-dried tomatoes, green onion, garlic, remaining ½ tsp salt, and ¼ tsp black pepper. Cook for 1 minute until fragrant.

3. Make the Creamy Sauce:

  • Pour in the heavy cream and sprinkle the Parmesan cheese evenly over the top. Bring to a gentle boil while stirring frequently. Reduce the heat and simmer for about 2 minutes, or until the sauce slightly thickens. Adjust seasoning with salt and pepper to taste.

4. Finish the Dish:

  • Add the baby spinach and stir until wilted. Return the chicken to the skillet, spoon the sauce over the chicken, and let everything warm through for a minute.
