  • 1 baguette, sliced into 1/2” thick diagonal slices
  • 4 Tbsp extra virgin olive oil, divided
  • 2 cups cherry tomatoes (12 oz), quartered

  • 1/8 tsp fine sea salt
  • 1/8 tsp freshly ground black pepper
  • 4 oz goat cheese (or Boursin Cheese, or cream cheese)
  • 2 Tbsp balsamic glaze (store-bought or homemade)

Instructions

  1. Preheat the oven to 400°F (200°C), positioning the rack in the center.
  2. Slice the baguette diagonally into 1/2” thick slices and arrange them on a rimmed baking sheet.
  3. Brush both sides of the baguette slices with 3 Tbsp of extra virgin olive oil. Bake for 7 to 10 minutes, until the edges are slightly golden and crisp. Remove the toasts and let them cool to room temperature.
  4. In a mixing bowl, combine quartered cherry tomatoes, chopped basil, minced garlic, 1 Tbsp olive oil, salt, and pepper. Toss gently to combine.
  5. Once the toasts have cooled, spread a generous layer of goat cheese (or your choice of cheese) over the tops.
  6. Spoon the tomato mixture onto the crostini and drizzle with balsamic glaze. Serve immediately and enjoy!
