Ingredients:

  • 2 large chicken breasts, cut in half lengthwise
  • Salt and pepper, to taste
  • 1/2 teaspoon garlic powder
  • Flour, for dredging
  • 1 tablespoon olive oil
  • 3 tablespoons butter, divided
  • 2/3 cup dry white wine
  • 1 tablespoon fresh tarragon, chopped
  • 1/2 cup heavy cream
  • Fresh chopped parsley (optional, for garnish)

Instructions:

  1. Slice the chicken breasts in half lengthwise to create 4 thinner cutlets. Season with salt, pepper, and garlic powder. Lightly coat each piece in flour.
  2. Heat olive oil and 1 tablespoon butter in a skillet over medium-high heat. When hot, add the chicken cutlets and cook for 4-5 minutes on each side until golden brown. Remove the chicken and set aside on a plate.
  3. Pour the white wine into the pan and let it simmer for about 1 minute, scraping up any browned bits from the bottom.
  4. Add the remaining butter and chopped tarragon to the skillet. Let the mixture simmer for 2 more minutes.
  5. Stir in the heavy cream, then return the chicken to the pan. Lower the heat to medium and cook for another 5 minutes or until the chicken is cooked through and the sauce thickens. Adjust seasoning with salt and pepper as needed.
  6. Garnish with fresh parsley if desired and serve immediately.

  • Avoid overcooking the chicken to keep it juicy and tender.

Variations and Substitutions

  • Substitute heavy cream with half-and-half or coconut cream for a lighter or dairy-free option.
  • Swap white wine with chicken broth if preferred or for an alcohol-free version.
  • Add mushrooms or shallots to the sauce for extra texture and flavor.
