    In a large skillet over medium-high heat, cook the ground beef, breaking it apart as it cooks, until fully browned and no pink remains (about 8–10 minutes). Drain any excess fat.
  2. Season the meat:
    Add the taco seasoning and water to the skillet. Stir well, reduce the heat to low, and let it simmer for 3–4 minutes until the mixture thickens. Remove from heat and set aside.
  3. Warm the beans and sauce:
    Heat the refried beans in a microwave-safe bowl or on the stovetop until warm.
    Warm the enchilada sauce in a saucepan or microwave.
  4. Assemble the enchiritos:
    Place one tortilla on a microwave-safe plate. Spread about 2 tablespoons of refried beans down the center. Add a portion of the seasoned beef and sprinkle a little diced onion on top.
  5. Roll and top:
    Roll the tortilla tightly like a burrito and place it seam-side down. Spoon a generous amount of enchilada sauce over the top, then sprinkle with shredded cheddar cheese.
  6. Melt the cheese:
    Microwave until the cheese is melted and bubbly.
  7. Finish and serve:
