Instructions

1. Prepare the patties.

Divide the beef mixture into 4 equal portions. Shape each portion into a patty about ยผ inch thick, pressing a shallow indentation in the center with your thumb or spoon. This helps the patties cook evenly and prevents puffing up. Make each patty slightly wider than the buns, as they shrink during cooking.

3. Cook the patties.
Heat a large skillet (cast iron works best) over medium-high heat. Add 1 tablespoon vegetable oil. Once hot, place the patties in the skillet, working in batches if necessary. Cook until browned and crusty on the bottom, about 3โ€“5 minutes. Flip and cook on the other side until your preferred doneness, about 3โ€“5 more minutes (6โ€“10 minutes total).

4. Add cheese.
Place a slice of American cheese on each patty. Remove the skillet from heat, cover with a lid, and let the cheese melt for 1โ€“2 minutes.

5. Assemble the burgers.
Toast the buns lightly, then layer with your favorite condiments and toppings. Place the burger patties on the buns, close, and serve hot.
