Ingredients

For the Taco Bowls

  • 1 tablespoon vegetable oil
  • 1 pound (450 g) 93% lean ground turkey
  • ½ medium red bell pepper, diced
  • 1 tablespoon homemade taco seasoning mix (or store-bought)
  • 10 ounces Ro-Tel Diced Tomatoes and Green Chilies (mild or your preferred spice level)
  • 1 (15-ounce) can black beans, rinsed and drained
  • ½ cup frozen corn (no need to thaw)
  • 1 batch Cilantro Lime Rice (recipe below or pre-made)

Optional Toppings

  • Fresh cilantro leaves
  • Sour cream
  • Sliced avocado
  • Hot sauce

Instructions

Cook the Ground Turkey

  1. Heat the vegetable oil in a 12-inch skillet over medium heat.
  2. Add the ground turkey and diced red bell pepper. Cook, stirring frequently to break up the meat, until fully cooked.
  3. Drain any excess grease from the skillet and return it to the heat.

Add Flavor and Simmer

  1. Stir in the taco seasoning and Ro-Tel diced tomatoes.
  2. Reduce heat to low, cover, and simmer for about 10 minutes, until most of the liquid from the tomatoes has been absorbed.

Add Beans and Corn
