Ingredients

  • 225 g (8 oz) Neufchâtel (light) cream cheese or regular cream cheese, softened
  • 3 tablespoons light sour cream
  • 1 can (280 g / 10 oz) RoTel tomatoes, lightly drained
  • ½ teaspoon minced garlic
  • ½ teaspoon all-purpose seasoned salt (such as Lawry’s)
  • ½ teaspoon freshly ground black pepper
  • 1 cup shredded cheddar cheese
  • 5 green onions, thinly sliced
  • 1 small can (65 g / 2.25 oz) chopped olives, drained
  • 1 jalapeño, diced (seeds removed if desired, optional)
  • 2 cups cooked shredded chicken (rotisserie chicken works well)
  • 5 large burrito-size flour tortillas or flavored wraps

Instructions

  1. Prepare the filling
    In a large bowl, use a hand mixer or stand mixer to blend the cream cheese, sour cream, RoTel tomatoes, garlic, seasoned salt, and black pepper until smooth and creamy.
  2. Add the mix-ins
    Using a spoon or spatula, gently fold in the cheddar cheese, green onions, olives, jalapeño (if using), and shredded chicken until evenly combined.
  3. Assemble the pinwheels
    Lay the tortillas flat on a clean surface. Divide the chicken mixture evenly among them, spreading it into an even layer while leaving about a 1 cm (½-inch) border around the edges.
  4. Roll and chill
    Roll each tortilla tightly into a log. Wrap each roll firmly in plastic wrap and refrigerate for at least 1 hour to help them set.
  5. Slice and serve
    Unwrap the chilled tortillas and use a sharp knife to slice them into 5 cm (2-inch) pinwheels. Arrange on a serving platter.
