½ cup unsalted butter, at room temperature
¾ cup granulated sugar
1 teaspoon vanilla extract
¾ teaspoon ground cinnamon
Pinch of fine sea salt
- For the Topping:
½ cup granulated sugar
¾ teaspoon ground cinnamon
Pinch of fine sea salt
6 tablespoons unsalted butter, melted
Directions
- Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
- Prepare the Cream Cheese Filling: In a stand mixer fitted with a paddle attachment, combine the cream cheese, ½ cup (1 stick) of butter, ¾ cup of sugar, vanilla extract, ¾ teaspoon of cinnamon, and a pinch of salt. Mix on medium-high speed for 3-4 minutes until smooth and fluffy. Scrape down the sides of the bowl and mix again until fully incorporated. Set aside.

- Assemble the Cheesecake: Spread the cream cheese filling evenly over the puff pastry in the pan. Carefully lay the second sheet of puff pastry on top of the filling.
- Prepare the Topping: In a small bowl, mix together ½ cup of sugar, ¾ teaspoon of cinnamon, and a pinch of sea salt. Drizzle the melted 6 tablespoons of butter evenly over the top of the puff pastry, then sprinkle the sugar mixture over the butter.
- Bake: Place the pan in the preheated oven and bake for 35-40 minutes, or until the top is golden brown. Once baked, remove from the oven and allow to cool for 1-2 hours before slicing into squares.
