Instructions:

  1. Activate the Yeast: In the bowl of your mixer, combine warm milk (about 110°F) with 1 tablespoon of sugar. Sprinkle the yeast over the top and let it sit for 1 minute. Then, whisk the mixture and allow it to sit for 5 minutes, or until the yeast becomes foamy.
  2. Prepare the Dough: Add 4 tablespoons of melted butter, the remaining sugar, and salt to the yeast mixture. Gradually add flour, half a cup at a time, whisking to incorporate. Once the dough thickens and becomes harder to mix with a whisk, switch to the dough hook attachment and mix on speed 2. You can also continue mixing by hand with a stiff spatula. Add flour as needed, 1 to 3 tablespoons, until the dough is soft, sticky, and slightly tacky but doesn’t stick to clean fingers.
  3. Knead the Dough: Knead the dough in the stand mixer with the dough hook for about 2 minutes, or knead by hand for about 10 minutes. Once the dough is smooth and elastic, place it in a lightly oiled bowl. Cover with plastic wrap and let it rise in a warm place for 2 hours or until doubled in size.
  4. Shape the Rolls: Once the dough has risen, turn it out onto a lightly floured surface. Divide the dough into 15-24 even pieces, depending on the size of your rolls and baking dish. Roll each piece into a ball and place them in a greased 9×13 baking dish or a baking sheet.
  5. Second Rise: Cover the rolls with plastic wrap and allow them to rise for another 30-60 minutes, or until they are puffed up and have almost doubled in size. Be careful not to over-proof.
  6. Bake: Preheat the oven to 375°F (190°C). Bake the rolls for 23-25 minutes, or until the tops are golden brown.
  7. Finish the Rolls: Immediately after baking, brush the tops of the rolls with melted butter and sprinkle with kosher salt. Let the rolls cool to room temperature before serving.
