Chocolate Cupcakes

  • 1ยฝ cups (340 g) unsalted butter, softened to room temperature
  • 5ยฝ cups (650 g) powdered sugar
  • 2 teaspoons (10 ml) vanilla extract
  • 2 teaspoons (10 ml) milk

To Decorate

  • 12 marshmallows
  • Black icing
  • Funfetti sprinkles or sugar pearls
  • Orange fondant (for noses)

Instructions

  1. Preheat the Oven:
    Preheat your oven to 325ยฐF (160ยฐC) or 140ยฐC if using a fan oven. Line a 12-cup muffin tin with paper liners.
  2. Make the Batter:
    In a mixing bowl, whisk together eggs, sugar, oil, and vanilla extract until smooth. Stir in milk.
    Add flour, cocoa powder, baking powder, and salt. Mix gently until just combinedโ€”do not overmix. The batter will be slightly runny.
