  • 2 lasagna noodles, broken into 2-inch pieces

  • 1 clove garlic, minced

  • ¾ cup shredded mozzarella cheese, divided

  • 2 tablespoons shredded Parmesan cheese, divided

Instructions

  1. Cook the Pasta: Bring 2 quarts of water to a boil. Add the lasagna noodles and cook for 5–7 minutes, stirring occasionally to prevent sticking. Drain and transfer to a medium bowl. Optional: drizzle with 1 teaspoon of olive oil to prevent sticking.
  2. Preheat the Oven: Set the oven to 425°F (220°C). Lightly grease a 9×13-inch (quarter sheet) pan with olive oil.
  3. Sauté the Onion: Heat ½ tablespoon olive oil in a 10-inch skillet over medium heat. Add the onions and cook for 2 minutes, stirring frequently.
  4. Add Garlic: Stir in the minced garlic and cook for an additional minute.
  5. Cook the Beef: Add the ground beef to the skillet, breaking it apart with a spatula. Season with Italian seasoning, salt, and black pepper. Cook for about 5 minutes until browned. Drain any excess grease.
  6. Make the Sauce: Stir in the tomato sauce and simmer over low heat for 2 minutes.
  7. Combine Pasta and Sauce: In the bowl with cooked noodles, mix in the meat sauce and ¼ cup of shredded mozzarella until evenly combined.
  8. Assemble the Lasagna: Spread the mixture evenly in the prepared baking pan.
  9. Add Ricotta: In a small bowl, combine ricotta with 1 tablespoon Parmesan. Dollop this mixture over the pasta.
  10. Top with Cheese: Sprinkle the remaining mozzarella and Parmesan evenly over the top.
  11. Bake: Bake uncovered for 25–30 minutes, until the cheese is bubbly and lightly browned.
