Ingredients

  • 16 ounces fresh strawberries, hulled and sliced in half
  • ½ cup granulated sugar
  • 1 ½ tablespoons cornstarch
  • 1 ½ tablespoons water

  1. Cook the Base: In a 2-quart saucepan, combine about 10 ounces of the strawberries with the granulated sugar. Heat over medium heat and bring to a boil, stirring frequently for 1 minute.
  2. Prepare Cornstarch Slurry: In a small bowl, whisk together the cornstarch and water until smooth.
  3. Thicken the Filling: Slowly stir the cornstarch mixture into the boiling strawberries. Return to a boil, then reduce heat to low and simmer for 5–7 minutes, stirring often, until the mixture thickens and becomes clear and glossy.
  4. Cool the Mixture: Remove the saucepan from heat and transfer the filling to a medium bowl. Let it cool completely, about 30 minutes.
  5. Add Remaining Strawberries: Fold in the remaining 6 ounces of fresh strawberries. Cover the bowl and refrigerate for at least 3 hours to allow the flavors to meld.
