Ingredients

  • ¼ cup granulated sugar
  • 2 tablespoons unsweetened cocoa powder
  • 2 tablespoons cornstarch
  • 1 ½ cups whole milk, divided
  • 1 large egg yolk
  • 1 tablespoon butter
  • 1 teaspoon vanilla extract
  • ¼ cup semi-sweet chocolate chips
  • Optional: whipped cream, for serving

Instructions

  1. In a small saucepan, whisk together the sugar, cocoa powder, and cornstarch until well combined.
  2. Pour in ½ cup of the milk and whisk until the mixture is smooth and lump-free.
  3. Gradually add the remaining milk along with the egg yolk, whisking continuously to combine.
  4. Place the saucepan over medium heat and cook, stirring frequently, until the mixture begins to gently simmer (about 5 minutes).
  5. Once it reaches a simmer, stir constantly for about 2 minutes until it starts to thicken.
  6. Lower the heat and continue stirring for another 2 minutes, until the pudding becomes rich and creamy.
  7. Remove from heat and immediately stir in the butter, vanilla extract, and chocolate chips until fully melted and smooth.
  8. Pour the pudding into serving bowls or a single dish. Cover if desired and refrigerate for at least 4 hours, or until fully chilled and set.
  9. Top with whipped cream before serving, if desired.

Variations and Substitutions

  • Dairy-free option: Use plant-based milk (like almond or oat) and vegan butter
  • Extra chocolatey: Add more chocolate chips or a bit of dark chocolate
  • Mocha version: Stir in ½ teaspoon instant coffee
  • Vanilla twist: Replace cocoa with vanilla and skip chocolate chips for a vanilla pudding
  • Lower sugar: Reduce sugar slightly or use a sugar alternative

FAQs

Can I make this pudding without egg yolk?
Yes, but the texture will be slightly less rich. You can increase cornstarch slightly to compensate.

How long does it last in the fridge?
It keeps well for up to 3 days when stored covered in the refrigerator.

Can I freeze chocolate pudding?
Freezing is not recommended as it can change the texture once thawed.

Why is my pudding not thickening?
It may need more cooking time, or the heat may be too low. Keep stirring until it thickens properly.

Serving

Serve chilled in small bowls, ramekins, or glasses. Add a swirl of whipped cream, chocolate shavings, or fresh berries for a simple yet elegant presentation.
