Ingredients

For the Crust:

  • ½ cup graham cracker crumbs
  • 2 tablespoons salted butter, melted

For the Cheesecake Filling:

  • 8 ounces full-fat cream cheese, room temperature
  • ¼ cup granulated sugar
  • 2 tablespoons sour cream, room temperature
  • ½ teaspoon vanilla extract
  • 1 large egg, room temperature
  • Whipped cream and fresh berries (optional, for topping)

Instructions

  1. Preheat Oven: Set the oven to 350°F (175°C).
  2. Prepare the Baking Dish:
    • Lightly butter a 5×5-inch or 4×6-inch baking dish.
    • Cut two strips of parchment paper and place one in the dish with ends hanging over the sides. Lay the second strip across the first to form a cross. This makes lifting the cheesecake out easier after baking.
  3. Make the Crust:
    • In a small bowl, mix graham cracker crumbs with melted butter.
    • Press the mixture evenly into the bottom of the prepared dish using your fingertips, the back of a spoon, or a glass bottom.
    • Bake for 12–15 minutes, then remove and let cool.
  4. Make the Cheesecake Filling:
    • Lower the oven temperature to 325°F (160°C).
    • In a medium bowl, beat the cream cheese on medium speed until smooth.
    • Add sugar, sour cream, and vanilla extract, mixing until combined.
    • Lightly beat the egg in a separate bowl, then fold it into the mixture. Mix just until combined to avoid cracks.
    • Pour the filling over the cooled crust and spread evenly.
  5. Bake the Cheesecake:
    • Bake for 18–20 minutes, until the center is set.
    • Let cool completely at room temperature. Cover and refrigerate for at least 4 hours or overnight.
  6. Serve:
    • Use the parchment strips to lift the cheesecake from the dish. If needed, let it sit at room temperature for a few minutes.
    • Slice into bars (4 pieces recommended, or any size you prefer).
    • Top with whipped cream and fresh berries if desired.

Pro Tip: Avoid overmixing the egg and overbaking to keep the cheesecake smooth and crack-free.

FAQs

Q: Can I make these ahead of time?
A: Yes, refrigerate for up to 3 days. For longer storage, freeze for up to 1 month.

Q: Can I double the recipe?
A: Yes, use a larger baking dish and increase baking time slightly.

Q: How do I prevent cracks?
