Ingredients

  • 6 lbs boneless, skinless chicken breasts
  • 2 teaspoons salt
  • 2 teaspoons black pepper
  • 2 teaspoons garlic powder
  • (Optional) ยฝ cup water or chicken broth (see note below)

Instructions

  1. Add Ingredients to Slow Cooker
Place the chicken breasts in the bottom of your slow cooker. Sprinkle evenly with salt, pepper, and garlic powder. If desired, add ยฝ cup of water or chicken broth for extra moisture.
  2. Cook Until Tender
Cover and cook on low for 8 hours, or until the chicken is tender and shreds easily with a fork.

If cooking a smaller batch (e.g. 2โ€“3 lbs), reduce the cooking time to 4โ€“6 hours and monitor doneness.

  1. Shred the Chicken
Use two forks or the paddle attachment of a stand mixer to shred the cooked chicken. Discard excess liquid or save it for future use (like soups or sauces).
  2. Serve or Store
Use immediately, or let cool and store in sealed containers or ziplock bags. It freezes beautifully for future meals!

Note: If you’re using frozen chicken breasts, thereโ€™s usually no need to add liquidโ€”frozen meat releases plenty of juices during cooking. However, feel free to add broth or water if you’re concerned about dryness, especially when using fresh chicken.

Tips

  • Use tongs to easily remove hot chicken from the slow cooker.
  • Shred while warm โ€“ Itโ€™s much easier than when cold.
  • Donโ€™t skip seasoning โ€“ Even a basic blend like salt, pepper, and garlic makes a big difference.
  • Store in portions โ€“ Freeze in 1โ€“2 cup batches for easy grab-and-go use.

Variations and Substitutions

  • Change up the seasoning โ€“ Add onion powder, smoked paprika, Italian seasoning, or taco seasoning depending on how youโ€™ll use the chicken.
  • Use thighs instead of breasts โ€“ They stay extra juicy and flavorful.
  • Make it spicy โ€“ Add cayenne pepper, hot sauce, or diced jalapeรฑos to the mix.
  • Add fresh herbs after shredding for added flavor (like parsley or cilantro).

FAQs

Can I use frozen chicken?
Yes! Frozen chicken breasts work well and will release plenty of moisture. Just ensure theyโ€™re separated and not frozen in one solid block.

Do I need to add liquid?
Not necessarily. Frozen chicken releases its own juices, but a splash of broth or water helps ensure juicinessโ€”especially when using fresh chicken.

How long does it last?
Shredded chicken lasts up to 4 days in the refrigerator and up to 3 months in the freezer when stored in airtight containers.

Can I double the recipe?
Absolutelyโ€”just make sure your slow cooker can accommodate it. Cooking time may increase slightly.
