Slow Cooker Green Chile Beef with tender, shredded beef in a smoky, mildly spicy green enchilada sauce. Perfect for tacos, burrito bowls, or comforting weeknight dinners. Ingredients

  • 2.5–3 pounds boneless lean beef roast (chuck, cross rib, or bottom round)
  • 1 large sweet yellow onion, or 2 small to medium onions, halved and sliced into ½-inch slices
  • 4 tablespoons packed light brown sugar, divided
  • 1 tablespoon smoked paprika
  • 1 ½ teaspoons salt
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • ½–1 teaspoon cayenne pepper (adjust to taste)
  • ½ teaspoon freshly ground black pepper
  • 3 tablespoons olive oil, divided
  • 15-ounce can mild to medium green enchilada sauce (Hatch Green Chile Enchilada Sauce recommended)

Instructions

  1. Prepare the beef and onions
    Slice the roast in half. Place the onion slices in the bottom of a 6-quart slow cooker and sprinkle 3 tablespoons of brown sugar over them (reserve 1 tablespoon for later).
  2. Make the seasoning rub
    In a small bowl, mix the remaining brown sugar with smoked paprika, salt, chili powder, garlic powder, cayenne pepper, and black pepper.
  3. Season the beef
    Drizzle 1 tablespoon of olive oil over the beef and rub it evenly with your hands. Sprinkle the seasoning mix over all sides of the beef, pressing it in with your hands.
  4. Brown the beef
    Heat the remaining 2 tablespoons of olive oil in a large skillet over medium-high heat. Brown the beef on all sides, including the ends, for about 2 minutes per side. The sugar in the rub will help create a deep, flavorful crust.
  5. Slow cook
    Transfer the beef to the slow cooker and pour the green enchilada sauce over the top. Cover and cook on LOW for 7–8 hours, until the beef is tender and easily shredded.
  6. Shred the beef
    Use a slotted spoon to transfer the beef and onions to a serving dish. Shred with two forks and mix in some of the cooking sauce. Alternatively, shred the beef directly in the slow cooker for a saucier result.
  7. Serve
    Serve in tortillas, over burrito bowls, or on Cheddar mashed potatoes.
