Ingredients

  • 1 tablespoon vegetable oil
  • 5 bratwurst
  • 1 large sweet onion, thinly sliced
  • 2 cloves garlic, minced
  • 16 oz sauerkraut, well drained and rinsed
  • 1 Honeycrisp apple, peeled and diced

  • 2 tablespoons light brown sugar, packed
  • 1 tablespoon whole-grain mustard

  3. Add minced garlic and cook for about 30 seconds until fragrant, then remove from heat.
  4. In a 6-quart slow cooker, combine sauerkraut, diced apple, beer, brown sugar, whole-grain mustard, and caraway seeds. Stir well.
  5. Add the seared bratwurst, cooked onions, and garlic into the slow cooker. Mix gently.

Tips

  • Searing the brats first adds extra flavor and texture.
  • Rinse and drain sauerkraut well to reduce excess sourness.
  • Use a good-quality lager for the best depth of flavor.
  • Cook on LOW whenever possible for more tender results.

Variations and Substitutions

  • Swap bratwurst with Italian sausage or turkey sausage.
  • Use red onion instead of sweet onion for a sharper taste.
  • Replace apple with pear for a slightly different sweetness.
  • Use apple cider instead of beer for a non-alcoholic version.
  • Add bell peppers for extra vegetables and color.

FAQs

Can I skip searing the brats?
Yes, but searing improves flavor and texture.

Can I make this without beer?
Yes, substitute with chicken broth or apple cider.

Can I cook this overnight?
It’s better to cook during the day on low for best texture.

Can I freeze leftovers?
Yes, freeze without buns for up to 2 months.

Serving

Serve bratwurst on toasted buns with sauerkraut and onions, or plate them with the apple-onion mixture and mustard on the side. They also pair well with potato salad, roasted potatoes, or coleslaw.

Top with extra whole-grain mustard, pickles, or caramelized onions for added flavor. This dish works well for game days, casual dinners, and outdoor gatherings where easy slow cooker meals are ideal.
