Slow Cooker Beef Barley Soup

Ingredients

  • 1 tablespoon vegetable oil, plus extra if needed
  • 1 ½ to 1 ¾ pounds beef stew meat (boneless beef chuck), cut into ½-inch cubes
  • Salt and freshly ground black pepper, to taste
  • 1 cup diced yellow onion
  • 1 cup chopped carrots (2–3 carrots, peeled)
  • ¾ cup diced celery (2 ribs)
  • 1 teaspoon minced garlic
  • 3 tablespoons tomato paste
  • 2 teaspoons Worcestershire sauce
  • 6 cups low-sodium beef broth
  • ⅔ cup pearl barley
  • 2 tablespoons fresh thyme leaves, or 2 teaspoons dried thyme
  • 2 cups coarsely chopped cremini mushrooms

Instructions

  1. Cut the beef into ½-inch cubes if not already done.
  2. Heat vegetable oil in a 12-inch skillet over medium-high heat. Brown half of the beef for about 3 minutes on one side, season with salt and pepper, then flip and brown for an additional 2–3 minutes. Transfer browned beef to a 6-quart slow cooker using a slotted spoon. Repeat with the remaining beef, adding more oil if needed.
  3. In the same skillet, add the onion, carrots, celery, and garlic. Cook, stirring occasionally, until the vegetables soften slightly and incorporate the beef juices left in the pan. Stir in tomato paste and Worcestershire sauce, cooking for 1–2 minutes until well combined. Transfer the mixture to the slow cooker with the beef.
  4. Add beef broth, pearl barley, and thyme to the slow cooker. Stir to combine. Cover and cook on LOW for 5–7 hours or HIGH for 3–4 hours.
  5. About 45–60 minutes before the end of cooking, stir in the mushrooms. Continue cooking until the beef is fork-tender. Taste and adjust seasoning with additional salt and pepper if needed.
