Ingredients

  • 2 filet mignon steaks (2 inches thick)
  • Salt and pepper to taste
  • 1/4 cup unsalted butter (1/2 stick)

Instructions

  1. Prepare the Steaks:
Remove the filet mignon steaks from the refrigerator 30–60 minutes before cooking to allow them to come to room temperature.
  2. Preheat the Oven:
Set your oven to 400°F and position the rack in the middle.
  3. Season the Steaks:
Pat the steaks dry using paper towels, then generously season both sides with salt and pepper.
  4. Heat the Skillet:
In a heavy, oven-safe skillet (like cast iron), melt the butter over medium-high to high heat. Stir the butter every 20–30 seconds to prevent it from burning. The pan should be very hot, which may take 4–5 minutes with cast iron on a gas stove.
  5. Sear the Steaks:
Place the steaks in the skillet. Continuously spoon the melted butter over the top of the steaks while they cook. Sear the first side for 2 minutes, then use tongs to flip the steaks and sear the second side for another 2 minutes, continuing to spoon butter over them.
  6. Finish in the Oven:
Transfer the skillet to the preheated oven. For medium doneness, cook until the steaks reach an internal temperature of 125–130°F. For medium-rare, remove the skillet when the steaks reach 120°F. Cooking time will vary depending on steak thickness and your oven, but a 2-inch steak typically takes around 10 minutes in the oven for medium. Use an instant-read thermometer to ensure accuracy.
  7. Rest the Steaks:
Remove the skillet from the oven and let the steaks rest for 5 minutes in the skillet. This step ensures the juices redistribute, leaving the steaks tender and juicy.
  8. Serve:
Spoon the leftover butter from the skillet over the steaks. The butter also pairs wonderfully with mashed potatoes or other side dishes. Serve and enjoy!

FAQs

How do I know when the steak is done without a thermometer?
Gently press the center of the steak. It should feel firm but slightly springy for medium doneness.

Can I use salted butter?
Yes, but adjust the amount of additional salt you use to season the steaks.

What if I don’t have an oven-safe skillet?
After searing, transfer the steaks to a baking dish lined with foil to finish cooking in the oven.
