  • 1 tablespoon olive oil
  • 1 pound bratwurst sausages
  • 1/2 medium onion, chopped
  • 2 medium carrots, peeled and chopped
  • 3 sticks celery, chopped

  • 4 cups beef broth
  • 1 cup water
  • 2 large Russet potatoes, peeled and diced
  • Salt & pepper to taste (adjust as needed)

Instructions

  1. Cook the Sausage
    Heat olive oil in a large soup pot or Dutch oven over medium-high heat. Remove the bratwurst from its casings, crumble it into the pot, and cook until browned and slightly crispy, about 8–10 minutes. Stir occasionally.
  2. Remove Excess Fat
    Spoon out the excess fat, leaving 1–2 tablespoons in the pot to enhance flavor.
  3. Sauté Vegetables
    Add the onions, carrots, and celery to the pot. Sauté for about 5 minutes, stirring frequently.
  4. Add Garlic
    Stir in the minced garlic and cook for about 30 seconds until fragrant.
  5. Combine Broth and Potatoes
    Pour in the beef broth and water. Add the diced potatoes and stir.
  6. Simmer the Soup
    Increase the heat to high and bring the soup to a boil. Once boiling, partially cover the pot with the lid and reduce the heat to a simmer. Cook for about 20 minutes, or until the potatoes and vegetables are tender.
  7. Season and Serve
    Taste the soup and adjust with salt and pepper as needed. Serve hot and enjoy!
