Ingredients:

  • For the Shrimp:
    • 2 lbs large shrimp (21-24 count), peeled and deveined
    • 1 tablespoon Old Bay Seasoning, plus 1 tablespoon salt for the cooking water
    • 2/3 cup mayonnaise
    • 1/2 teaspoon garlic powder
    • 1/2 teaspoon ground black pepper
  • For the Topping:
    • 1 tablespoon butter (plus more for greasing the pan)
    • 1/2 cup panko bread crumbs
    • 4 oz shredded mozzarella cheese
    • 4 oz shredded medium cheddar cheese

Instructions:

Prep:

  1. Preheat the oven to 375°F (190°C) and grease a 2 ½-quart casserole dish or skillet with butter.
  2. Bring a large pot of water to a boil. Add 1 tablespoon of salt and 1 tablespoon of Old Bay Seasoning. Add the shrimp and cook for about 30 seconds, just until they are opaque and cooked through. Remove the shrimp with a strainer and transfer to a large mixing bowl. Let them cool for a few minutes, then drain any excess liquid or gently soak it up with a paper towel.

Make the Shrimp Mixture: 3. Add mayonnaise, garlic powder, and black pepper to the shrimp and stir to coat evenly. Sprinkle the mozzarella and cheddar cheese over the shrimp and mix well to combine. 4. Transfer the shrimp mixture to the prepared casserole dish, spreading it out evenly.

Make the Topping: 5. In a separate bowl or measuring cup, melt 1 tablespoon of butter. Stir in the panko breadcrumbs until they are evenly moistened. Sprinkle the breadcrumb mixture over the shrimp.

Bake and Broil: 6. Bake uncovered at 375°F for 13-15 minutes, or until the center reaches 145°F on an instant-read thermometer. Then, broil for 1-2 minutes to brown the breadcrumbs. 7. Let the casserole rest for 15 minutes before serving. It can be served warm or at room temperature, making it an excellent option for transporting to a dinner party or potluck!

Tips

  • Don’t Overcook the Shrimp: Be sure to cook the shrimp just until they are opaque to avoid them becoming rubbery. They’ll continue cooking in the casserole.
  • Let it Rest: Allowing the casserole to rest for 15 minutes after baking helps the flavors meld and gives it time to firm up slightly, making it easier to serve.
  • Use Fresh Shrimp: For the best flavor and texture, use fresh shrimp rather than frozen, though frozen shrimp will work just as well if thawed properly.

Variations and Substitutions

  • Cheese Options: You can swap the mozzarella and cheddar with other cheeses like gouda, Parmesan, or provolone for a different flavor profile.
  • Add Veggies: Consider adding sautéed spinach, bell peppers, or mushrooms to the shrimp mixture for extra flavor and texture.
  • Gluten-Free Option: Use gluten-free breadcrumbs to make this casserole suitable for those following a gluten-free diet.
