Ingredients

For the Mashed Potatoes

  • 1 medium Yukon Gold potato, scrubbed and quartered (about 7 oz)
  • ½ cup whole milk
  • 1 clove garlic, minced
  • 1 tablespoon salted butter
  • ⅛ teaspoon kosher salt

For the Filling

  • ½ tablespoon olive oil
  • 2 tablespoons chopped onions
  • 1 clove garlic, minced
  • 4 ounces ground lamb or ground beef
  • ¼ teaspoon Italian seasoning
  • ⅛ teaspoon kosher salt
  • 1 teaspoon Worcestershire sauce
  • ¼ cup frozen mixed vegetables, or 1 small carrot, chopped
  • ¼ cup low-sodium beef broth

Instructions

Make the Mashed Potatoes

  1. Chop the potato into quarters and place in a 1-quart saucepan. Add the milk and minced garlic. Add extra milk if needed to nearly cover the potatoes.
  2. Cook over medium heat for 15 minutes, or until the potatoes are tender.
  3. Strain the potatoes, reserving the milk mixture in a separate bowl.
  4. Return the potatoes to the pan and mash using a potato masher or immersion blender, adding about ¼ cup of the reserved milk. Adjust milk to reach a thick, creamy consistency.
  5. Stir in butter and salt, then set aside.

Prepare the Filling

  1. Preheat the oven to 350°F (177°C).
  2. Heat olive oil in a 10-inch skillet over medium-high heat. Add onions and cook for 2 minutes, stirring occasionally.
  3. Add garlic, ground lamb (or beef), Italian seasoning, and salt. Cook for 4 minutes, until the meat is browned.
  4. Stir in Worcestershire sauce and vegetables.
  5. Pour in beef broth and bring to a boil over medium-high heat.
  6. Reduce heat to medium-low and simmer for 10 minutes, until most of the liquid evaporates. Remove from heat.

Assemble and Bake

  1. Grease a 10-ounce ramekin with butter or cooking spray.
  2. Spoon the meat mixture into the ramekin and top with mashed potatoes.
  3. Bake for 20 minutes until the top is slightly golden. Serve immediately.
