  4. Add about half of the spinach to the skillet. Use tongs to toss and coat it in the bacon fat and onions. As the spinach begins to wilt, continue adding the remaining spinach a handful at a time, tossing frequently until all the spinach is wilted. This should take about 5 minutes.
  5. Return the cooked bacon to the skillet and toss everything together. Season with salt and pepper to taste. Serve immediately.
