For the Stew:

  • 1 pound smoked sausage, sliced (see note)

  • 3 medium carrots, peeled and sliced thin
  • 4 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • 4 cups beef broth
  • 1 red bell pepper, chopped
  • 2 russet potatoes, peeled and diced small
  • 1 (14 oz) can white (cannellini) beans, drained
  • Salt and pepper to taste

Instructions

1. Sauté the Sausage:
Heat olive oil in a large pot over medium-high heat. Add sliced sausage and cook for 8–10 minutes, stirring occasionally, until browned and crispy. Transfer to a plate and set aside.

2. Cook the Aromatics:
In the same pot, melt butter. Add onion, celery, and carrots. Sauté for 8–10 minutes, or until the onions start to lightly brown and soften.

3. Add Seasonings:
Stir in minced garlic, tomato paste, Worcestershire sauce, Italian seasoning, and paprika. Cook for 1 minute, stirring frequently to release their aromas.

4. Build the Stew:
Pour in the beef broth and add the red bell pepper, diced potatoes, and drained beans. Return the sausage to the pot. Increase heat to high and bring the mixture to a boil.

5. Simmer and Thicken:
Reduce to a rapid simmer and cook, covered (with the lid slightly ajar), for at least 30 minutes, stirring occasionally. Cook until the potatoes are tender and starting to break down, the carrots have softened, and the flavors meld together. If the stew gets too thick, add more broth or water, 1/2 cup at a time, to reach your desired consistency.
