Ingredients

For the Beef Patty

  • 8 ounces ground beef
  • ½ teaspoon Worcestershire sauce
  • ½ teaspoon Italian seasoning
  • ¼ teaspoon mustard powder
  • ¼ teaspoon garlic powder
  • ⅛ teaspoon kosher salt
  • ⅛ teaspoon freshly ground black pepper
  • ½ tablespoon olive oil

For the Gravy

  • ½ tablespoon salted butter
  • 2½ ounces sliced onions (about ¼ small onion)
  • ¼ cup sliced mushrooms
  • ½ teaspoon Worcestershire sauce
  • ½ cup beef broth
  • 1 teaspoon sour cream

Instructions

  1. Prepare the beef patty
In a medium bowl, combine the ground beef, Worcestershire sauce, Italian seasoning, mustard powder, garlic powder, salt, and black pepper. Mix until just combined. Shape the mixture into a patty about ½ inch thick.
  2. Cook the patty
Heat the olive oil in a medium skillet over medium heat. Place the patty in the pan and cook for about 4 minutes on each side, or until browned and cooked through. Remove the patty from the skillet, place it on a plate, and loosely cover with foil to keep warm.
  3. Prepare the gravy
Reduce the heat to medium-low. In the same skillet, melt the butter. Add the sliced onions and cook for about 3 minutes, stirring occasionally until they begin to soften. Add the mushrooms and cook for another 3 minutes until tender.
  4. Build the sauce
Stir in the Worcestershire sauce and beef broth. Bring the mixture to a gentle boil, then lower the heat and let it simmer for about 3 minutes to allow the flavors to blend.
  5. Finish the dish
Stir the sour cream into the gravy until smooth. Return the cooked patty to the skillet and simmer for about 1 minute, spooning the sauce over the top.
  6. Serve
Transfer the Salisbury steak to a plate and pour the onion-mushroom gravy over the patty before serving.

Tips

  • Avoid overmixing the beef to keep the patty tender.
  • Use medium heat so the patty browns without burning.
  • If the gravy becomes too thick, add a splash of beef broth.
  • Let the patty rest briefly before adding it back to the gravy to keep it juicy.

Variations and Substitutions

  • Ground turkey option: Replace ground beef with ground turkey for a lighter version.
  • Extra flavor: Add a teaspoon of Dijon mustard to the beef mixture.
  • No mushrooms: Simply leave them out and increase the onions slightly.
  • Creamier gravy: Add an extra teaspoon of sour cream or a splash of cream.
  • Gluten-free: Use a gluten-free Worcestershire sauce and broth.
