Ingredients

  • 8 oz (225 g) frozen Brussels sprouts
  • 2 Tbsp extra virgin olive oil
  • Salt and pepper, to taste
  • Optional: fresh lemon juice and grated Parmesan for serving

Instructions

1. Preheat the Oven

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

2. Roast the Brussels Sprouts (First Stage)

Spread the frozen Brussels sprouts evenly on the sheet pan. Roast for 15 minutes to start thawing and lightly browning.

3. Season and Toss

Remove the pan from the oven. Drizzle with olive oil, and season with salt and pepper. Use a spatula to toss everything so the sprouts are evenly coated.

4. Roast Until Crispy

Return the pan to the oven and roast for 12–15 more minutes, until the Brussels sprouts are golden brown and crispy on the edges.

5. Serve

Optionally, squeeze fresh lemon juice over the roasted sprouts and sprinkle with grated Parmesan before serving.

Tips

  • Don’t overcrowd the pan: Ensures even roasting and crispiness.
  • Use high heat: 400°F gives a perfect caramelized exterior.
  • Toss midway: Helps all sides crisp evenly.
  • Optional add-ons: Garlic powder, smoked paprika, or balsamic drizzle can enhance flavor.

Variations and Substitutions

  • Oil alternatives: Avocado or vegetable oil works too.
  • Flavor twists: Add balsamic vinegar, maple syrup, or red pepper flakes before roasting.
  • Cheese topping: Swap Parmesan for feta or pecorino.
  • Fresh Brussels sprouts: Halve fresh sprouts and follow the same roasting method.

A: Yes! No need to thaw. Just increase initial roasting slightly if needed.

Q: How do I know when they’re done?
A: Golden brown edges and a tender interior indicate they are ready.

Q: Can I prepare ahead of time?
A: You can prep the Brussels sprouts and oil beforehand, but roast just before serving for best texture.
