  5. Reduce the heat to low, cover the skillet, and simmer for 15–18 minutes, until the rice is tender and the liquid is absorbed.
  6. Remove the skillet from the heat and let the rice sit, covered, for 5 minutes.
  7. Fluff the rice with a fork and season with additional salt and pepper if desired. Serve warm.
