Ingredients

Cupcakes:

  • ¾ cup granulated sugar
  • 2 large eggs, room temperature
  • 1½ teaspoons pure vanilla extract

  • 1¼ cups all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ¼ cup sprinkles

Vanilla Buttercream:

  • ½ cup unsalted butter, softened
  • 2 cups powdered sugar
  • 2 tablespoons heavy cream, whole milk, or half-and-half
  • 1 teaspoon pure vanilla extract
  • Blue food coloring
  • ⅛ teaspoon salt

Decorations:

  • 12 rainbow candy sour strips (3-inch, e.g., Airheads brand)
  • 2 tablespoons sprinkles

Instructions

  1. Prepare the Oven and Pan:
    Preheat oven to 350°F (180°C) and line a 12-cup muffin pan with cupcake liners.
  2. Make the Batter:
    In a large bowl, use an electric hand mixer to cream the butter and sugar on medium speed until light and smooth. Add eggs one at a time, mixing after each, then mix in vanilla extract and yogurt until combined.
  3. Mix Dry Ingredients:
    In a separate medium bowl, whisk together flour, baking powder, and salt.
  4. Combine Ingredients:
    Add about one-third of the dry ingredients to the wet mixture, mixing until combined. Add the remaining dry ingredients and sprinkles, mixing gently until everything is just incorporated.

    Fill each cupcake liner half to two-thirds full with batter. Bake for 20 minutes, or until a toothpick inserted in the center comes out clean. Let cupcakes cool completely before frosting.
  6. Prepare Buttercream:
    In a large bowl, beat the butter until smooth. Gradually add powdered sugar and continue mixing. Add salt, vanilla, and cream, beating until smooth and pipeable. Set aside about ¼ cup of plain buttercream. Add blue food coloring to the remaining buttercream and mix thoroughly.
  7. Decorate Cupcakes:
    • Blue Sky: Using Wilton Tip #2D (Closed Star Tip), pipe a spiral of blue buttercream from the center outward.
    • Clouds: Use Wilton Tip #12 to pipe white buttercream at the base of the rainbow to form clouds.
    • Place rainbow candy strips on top and add extra sprinkles as desired.
