Ingredients

For the Stir-Fry:

  • 2–3 cups mixed vegetables of your choice
(e.g. broccoli slaw, onions, bell peppers, carrots, zucchini, spinach, squash, tomatoes, scallions, etc.)
  • 1½ cups cooked protein
(beef, chicken, pork, shrimp, tofu, or any preferred protein)
  • ½ lb pasta or 1½ cups uncooked rice (makes ~3–4 cups cooked)
  • 2 tablespoons olive oil

For the Stir-Fry Sauce:

  • 2–3 tablespoons soy sauce (to taste)
  • 1 tablespoon brown sugar (add more for a sweeter sauce)
  • 1 tablespoon rice vinegar
  • 2 cloves garlic, minced
  • ½ teaspoon sesame oil
  • 1 teaspoon sriracha (optional, adjust to heat preference)
  • Freshly ground black pepper, chili flakes, and/or toasted sesame seeds (optional for garnish)

Instructions

  1. Cook the base
Prepare rice or noodles according to package instructions. Drain if necessary and set aside.
  2. Make the sauce
In a small saucepan, combine soy sauce, brown sugar, rice vinegar, garlic, sesame oil, and sriracha. Cook over medium heat, whisking occasionally, until the sugar dissolves. Remove from heat.
  3. Cook the protein
In a large skillet or wok, heat 1 tablespoon of olive oil over medium-high heat. Add your chosen protein and cook until fully done. Remove from the skillet and set aside.
  4. Sauté the vegetables
In the same skillet, add another tablespoon of olive oil if needed. Add the vegetables and stir-fry over medium-high heat for 3–4 minutes, until tender-crisp.
  5. Combine and finish
Add the cooked protein and rice or noodles back into the skillet with the vegetables. Pour in the sauce and stir to evenly coat everything. Stir-fry for another 1–2 minutes until heated through.
  6. Serve
Finish with a drizzle of sesame oil, extra sriracha if desired, and a sprinkle of sesame seeds or black pepper. Serve hot.

Tips

  • Cut veggies evenly so they cook at the same rate.
  • Use high heat for a good stir-fry sear and quick cooking.
  • Pre-cook rice or noodles in advance to save time.
  • Don’t overcrowd the pan — stir-fry in batches if needed for best texture.
  • Add garlic late in the veggie sauté to prevent burning.

Variations and Substitutions

  • Low-carb option: Swap rice/noodles for cauliflower rice or zucchini noodles.
  • Vegan version: Use tofu or tempeh and a plant-based sweetener.
  • Nutty twist: Add a spoonful of peanut butter to the sauce or top with crushed peanuts.
  • Different sauces: Try teriyaki, hoisin, or coconut aminos for a flavor change.
  • Add fresh herbs: Garnish with chopped cilantro, basil, or green onions.

FAQs

Can I make this ahead of time?
Yes. Prep all components ahead and reheat in a pan or microwave just before serving.

What veggies work best for stir-fry?
Firm vegetables like broccoli, carrots, bell peppers, snap peas, and onions are great. Leafy greens like spinach should be added at the end.

Can I freeze it?
Freezing is not ideal as cooked veggies can become mushy. It’s better enjoyed fresh or refrigerated for up to 3–4 days.

What type of rice is best?
Jasmine, basmati, or long-grain white or brown rice all work well.

Serving

  • Serve in a bowl topped with extra sesame seeds or green onions.
  • Add lime wedges or a drizzle of soy sauce for a finishing touch.
  • Pair with egg rolls, miso soup, or a fresh cucumber salad.
  • Serve over lettuce for a warm salad bowl.

Suggestions

  • Keep a stir-fry kit of pre-chopped veggies and sauce in the fridge for fast meals.
  • Use leftover cooked chicken or steak to reduce prep time.
  • Adjust the spice level with chili flakes or more sriracha.
  • Great for using up vegetables before they go bad—just toss them in!
