  • 1 can (15 oz) diced tomatoes with green chiles, drained
  • 1 cup (8 oz) evaporated milk
  • 1 lb (16 oz) white American cheese, cubed
  • 8 oz Monterey Jack cheese, cubed
  • 2 cups loosely packed chopped baby spinach
  • 1/4 cup chopped fresh cilantro
  • Fine sea salt and freshly ground black pepper, to taste

    In a large saucepan, heat butter or oil over medium-high heat. Add diced onion and jalapeño, and cook for about 5 minutes, stirring occasionally, until softened. Add garlic and sauté for another minute.
  2. Combine and Melt Cheese:
    Lower heat to medium-low. Stir in the drained tomatoes and chiles, followed by the evaporated milk. Gradually add both cheeses, stirring constantly until the mixture is completely melted and smooth.
  3. Add Greens and Season:
    Stir in chopped spinach and cilantro until well combined and wilted. Taste and season with salt and black pepper as needed. Adjust consistency with a splash of evaporated milk if the dip is too thick.
  4. Serve:
    Serve warm with tortilla chips, veggie sticks, or as a topping for nachos or tacos.
