  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon dried thyme
  • 15 oz bag frozen peas and carrots
  • 2 cups cooked chicken, shredded
  • 1 sheet frozen puff pastry, thawed
  • 1 egg + 1 tablespoon water (for egg wash)
  • 1 tablespoon fresh parsley, chopped (optional for garnish)

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. In a medium saucepan, melt the butter over medium heat.
  3. Add the diced onion and cook for about 2 minutes until softened.
  4. Stir in the minced garlic and cook for 30 seconds.
  5. Add the flour and whisk continuously for about 30 seconds to form a roux.
  6. Slowly pour in the chicken broth and milk while whisking to prevent lumps. Bring to a boil and cook for 2 minutes until thickened.
  7. Remove from heat and season with garlic powder, onion powder, salt, pepper, and thyme.
  8. Stir in the frozen peas and carrots along with the shredded chicken.
  9. Pour the mixture into an 8×8-inch baking dish.
  10. Place the puff pastry over the top, trimming if needed, and cut a few small slits to allow steam to escape.
  11. Brush the pastry with egg wash (egg mixed with water).
  12. Bake for 25–30 minutes, or until the pastry is golden and crisp.
  13. Garnish with fresh parsley if desired and serve warm.
