Ingredients

For the Chicken:

  • 2 large boneless, skinless chicken breasts (about 16 oz total), pounded to ½ inch thick and cut in half
  • 1 cup buttermilk
  • 1 teaspoon salt

For the Breading:

  • 1 ½ cups all-purpose flour
  • ½ cup cornstarch

For the Spicy Mayo:

  • ½ cup mayonnaise
  • 2 teaspoons hot sauce
  • ½ teaspoon smoked paprika

For Assembly:

  • 4 brioche buns
  • 2 tablespoons butter, softened
  • ½ cup dill pickle slices

Instructions

Step 1 – Marinate the Chicken

  1. In a large bowl, combine buttermilk, salt, pepper, and cayenne pepper.
  2. Add the chicken, toss to coat, cover with plastic wrap, and refrigerate for at least 30 minutes (or up to 24 hours).

Step 2 – Prepare the Breading

  1. In a shallow dish, whisk together flour, cornstarch, paprika, cayenne, garlic powder, salt, and pepper.
  2. For extra crispy coating, drizzle a spoonful of the buttermilk marinade into the flour mixture and rub with your fingers to form small clumps.

Step 3 – Bread the Chicken

  1. Remove chicken from the marinade, allowing excess to drip off.
