Pesto Chicken Caesar Salad with Tomatoes and Burrata

There’s something about a salad that feels like you’re eating at a restaurant—the kind with layers of flavor, creamy elements, and enough substance to feel like a real meal. This pesto chicken Caesar salad with tomatoes and burrata delivers exactly that. Grill-marked chicken tossed in basil pesto, fresh burrata that melts into the warm greens, crispy ciabatta croutons, and a tahini-lemon dressing that ties everything together. It comes together in 35 minutes and tastes like you spent the afternoon on it.

Why This Combination Works So Well – This Pesto Chicken Caesar

The beauty of this salad is how the warm and cool elements balance each other. The grilled pesto chicken brings heat and smoky depth. The burrata—soft, milky, and luxurious—melts slightly when it hits the warm greens and dressing, creating pockets of creaminess. The crispy croutons add texture, while the tahini-lemon dressing brings tang and richness without being heavy. Each bite has multiple layers, which is what makes it feel special without requiring special skills.

What You’ll Need

Start with boneless, skinless chicken breasts cut into bite-sized chunks. You’ll thread these onto skewers or cook them in a skillet. The pesto can be homemade or store-bought—either works beautifully here. For the dressing, you’ll want tahini (sesame paste), fresh lemon juice, Dijon mustard, Worcestershire sauce, and garlic. The croutons come from torn ciabatta bread toasted in olive oil and garlic until golden. And the burrata should be at room temperature before serving—this is important because cold burrata won’t have that creamy, spreadable texture you’re after.

How to Build the Croutons

Torn ciabatta bread toasts faster and more evenly than cubes, and it creates more surface area for that golden, crispy exterior. Heat olive oil in a skillet over medium heat until it shimmers, then add the torn bread and smashed garlic cloves. Stir occasionally for about 5 minutes until the bread is golden brown all over. The garlic perfumes the oil and the bread, but you’ll discard the cloves before serving. Season with salt right after removing from heat—this helps the salt stick to the warm, oily bread.

Cooking the Pesto Chicken Perfectly

Toss the chicken chunks with basil pesto, red pepper flakes, and salt before cooking. This seasons the chicken from the inside and gives it flavor as it cooks. You have two options: thread the pieces onto skewers for a grilled presentation, or cook them in a skillet over medium-high heat. Either way, the goal is light charring on the outside and cooked through in the center—about 10 to 12 minutes total if grilling, slightly less if pan-searing. Don’t move the chicken too much; let it sit on the heat long enough to develop color and a slight crust. Chicken should reach an internal temperature of 165°F to be safely cooked through.

The Tahini-Lemon Dressing That Brings It Together

This isn’t a traditional Caesar dressing, and that’s the point. Tahini replaces some of the richness that anchovies and egg yolks usually provide, creating a dressing that’s creamy but lighter. Blend together tahini, lemon juice, Dijon mustard, Worcestershire sauce, grated garlic, olive oil, and salt. The result should be smooth and pourable. Taste and adjust the salt and pepper—you want enough seasoning to make the dressing flavorful on its own, since the salad components are fairly neutral.

Small Details That Make a Difference

Room-temperature burrata is non-negotiable. If it’s cold from the fridge, it won’t have that soft, creamy quality that makes it special. Pull it out about 15 minutes before serving. When you toss the salad, do it gently—you want the burrata to break into creamy pieces, not get completely broken down. Add the dressing gradually; you can always add more, but you can’t take it out. The fresh herbs scattered on top aren’t just garnish—chives, thyme, and basil add brightness and a final layer of flavor. Serve immediately after assembling; the warm chicken will start to wilt the greens, which is actually ideal here.

Smart Swaps and Variations

If you don’t have burrata, fresh mozzarella works in a pinch, though it won’t be quite as creamy. You can make the pesto yourself with fresh basil, garlic, pine nuts, Parmesan, and olive oil, or use store-bought—quality varies, so choose one you like. For the dressing, you can substitute Greek yogurt for some of the tahini if you want it tangier. If you’re avoiding skewers, simply cook the pesto chicken in a hot skillet until browned on all sides. You can also add grilled vegetables like zucchini or bell peppers for more volume.

It pairs beautifully with Crockpot BBQ Chicken.

Mistakes That Can Throw Off the Dish

Using cold burrata is the biggest one—it won’t melt into the salad or have that luxurious texture. Overcooking the chicken makes it dry and tough; keep an eye on it and pull it off the heat as soon as it’s cooked through. Underdressing the salad leaves it tasting flat; make sure you’re using enough of that tahini-lemon dressing. Burning the croutons creates a bitter taste that’s hard to mask—keep the heat at medium and stir them as they cook. Assembling the salad too far ahead means the greens will wilt and the croutons will soften; this is best served right after tossing.

How to Store Leftovers Without Ruining the Texture

This salad is best eaten fresh, but you can store components separately. Keep the dressed greens, croutons, and chicken in separate containers in the fridge for up to 2 days. The burrata doesn’t keep well once it’s been dressed, so don’t include it in leftovers. When you’re ready to eat again, toss the greens with a fresh piece of burrata and warm the chicken gently before assembling.

Reheating Without Drying Out the Chicken

If you have leftover chicken, warm it gently in a skillet over low heat for just a minute or two, or eat it cold—it’s actually quite good that way. Don’t microwave the chicken; it tends to dry out further. The salad itself is best served fresh, so if you’re planning leftovers, store the components separately and reassemble when you’re ready to eat.

What to Serve Alongside

This salad is substantial enough to be a main course on its own, but it pairs well with crusty bread for soaking up the dressing. A light white wine like Pinot Grigio or Sauvignon Blanc complements the fresh pesto and lemon flavors. If you’re serving it as part of a larger meal, add a simple antipasto platter with cured meats and olives, or roasted vegetables on the side.

  • 2 cups torn ciabatta bread

  • 2 cloves garlic, smashed

  • 1 pound boneless skinless chicken breasts, cut into bite size chunks

  • 1/2 cup basil pesto, homemade or store-bought

  • red pepper flakes, kosher salt, and black pepper

  • 6 cups shredded romaine lettuce

  • 2 cups cherry tomatoes, halved

  • 8 ounces burrata cheese, at room temperature

  • fresh herbs, for serving, such as chives, thyme, and basil

  • 1/4 cup extra virgin olive oil

  • juice of 2 lemons

  • 1/4 cup tahini

  • 2 tablespoons dijon mustard

  • 2 teaspoons Worcestershire sauce

  • 1-2 cloves garlic, grated

  • kosher salt and black pepper

  • 1/3 cup grated parmesan

Directions

  • To make the croutons. Heat the olive oil in a small skillet over medium heat. When the oil shimmers, add the bread and garlic. Cook, stirring occasionally until golden and toasted all over, about 5 minutes. Remove from the heat and season with salt. Slide bread crumbs onto a plate, discard the garlic. 2.To make the dressing. Combine all ingredients in a blender and blend until smooth. Taste and adjust the salt and pepper.
  • To make the chicken. In a bowl, combine the chicken, pesto, crushed red pepper flakes, and a large pinch of salt. Set your grill, grill pan or skillet to medium-high heat. Take skewers and thread the chicken pieces on. Alternately, you can cook the chicken in a skillet until browned all over.
  • Grill the skewers until lightly charred and cooked through, turning them occasionally throughout cooking, about 10 to 12 minutes total.
  • Assemble the salad. Add the romaine, tomatoes, croutons, chicken, croutons, and dressing. Toss to combine. Once the salad has been tossed, top with burrata, drizzle with oil, season with salt, pepper, and fresh herbs. Serve immediately.

Frequently Asked Questions

Can I make this salad ahead of time?

You can prep the components separately—cook the chicken, make the croutons, and prepare the dressing ahead. However, don’t assemble the salad until right before serving. The croutons will soften and the greens will wilt if dressed too early.

What can I use if I don't have burrata?

Fresh mozzarella, ricotta, or even goat cheese work as substitutes. The texture and richness will be slightly different, but the salad will still be delicious. Avoid using cold cheese straight from the fridge.

Can I use store-bought pesto?

Yes, store-bought pesto works beautifully and saves time. Quality varies by brand, so choose one you enjoy. Homemade pesto is fresher if you have time to make it.

What if I don't have a grill?

Cook the chicken in a hot skillet over medium-high heat instead. You’ll still get browning and flavor, just without the grill marks. Thread it on skewers for presentation if you like.

How do I know when the chicken is done?

Use a meat thermometer—chicken is safely cooked when it reaches 165°F internally. If you don’t have a thermometer, cut into the largest piece; there should be no pink inside.

Can I make the tahini dressing ahead?

Yes, make it up to 2 days ahead and store it in an airtight container in the fridge. Stir well before using, as it may separate slightly.

Is this salad filling enough for a main course?

Yes, with the grilled chicken, burrata, and croutons, it’s substantial enough to serve as a satisfying main course for lunch or dinner.
