Ingredients
1 cup unsalted butter, melted
3/4 cup granulated sugar
1 cup packed light brown sugar
2 large eggs
1 tablespoon pure vanilla extract
1 teaspoon baking soda
1/2 teaspoon salt
3 1/4 cups all-purpose flour
3/4 cup chocolate chips
30 miniature peanut butter cups (see note)
1 (14-ounce) can fat-free sweetened condensed milk
1/4 cup creamy peanut butter
Directions
- Preheat & Prep: Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with foil, leaving some overhang for easy removal. Lightly coat the foil with nonstick cooking spray.
- Make the Cookie Dough: In a large bowl, combine the melted butter, granulated sugar, and brown sugar. Stir until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, baking soda, and salt. Gradually add the flour, mixing just until combined. Fold in the chocolate chips.
- Prepare Peanut Butter Filling: In a small bowl, combine the sweetened condensed milk and peanut butter. Stir until the mixture is smooth and creamy.
- Assemble the Bars: Press half of the cookie dough into the bottom of the prepared pan, using your hands or a spatula. Place the miniature peanut butter cups evenly over the dough. Pour the peanut butter mixture on top, being careful to leave a 1/4-inch border around the edges so it doesn’t touch the foil. Break the remaining cookie dough into pieces and gently press them on top of the filling, covering as much of the surface as possible.
