
Traditional fast food does not appeal to my family. This is probably a good thing, except that their taste senses limit me when I’m searching for a quick, on-the-go dinner!
In less than 30 minutes, you can make a copycat Panera Broccoli Cheese Soup! Without leaving your house, you can have the ideal bowl of comfort food!
Ingredients
¼ cup butter (unsalted)
½ cup onions, chopped (yellow or white)
1 cup carrots, shredded
2 ½-3 cups broccoli florets, tiny chopped
1 ½ cups chicken broth
1 cup milk
1 cup heavy cream (whipped)
¼ cup flour (all-purpose)
1 ½ teaspoon kosher salt
½ teaspoon black pepper
a pinch of red pepper flakes, crushed
2 cups cheddar cheese, shredded
Instructions
Melt butter in a large pot over medium-high heat.
Combine the onions, carrots, and broccoli in a large mixing bowl. Cook for 5 minutes to soften (may be more or less depending on the size of vegetables you cut).
Add the broth, milk, and cream in a slow, steady stream. Add flour, salt, pepper, and red pepper flakes to taste. Continue to whisk and cook over medium heat until the sauce has thickened.
It will take roughly 10-15 minutes to complete this task.
When the sauce has thickened, add the cheese and stir until it is melted and smooth. Serve the soup and have fun!
