Orange Sesame Ginger Glazed Salmon

Ingredients (Serves 4)

  • 4 salmon fillets (6 ounces each; if frozen, thaw completely in the refrigerator overnight)
  • Salt, to taste
  • ⅓ cup orange marmalade
  • ¼ cup low-sodium soy sauce or tamari (for gluten-free)
  • 1 teaspoon sesame oil
  • 1 teaspoon finely grated fresh ginger (use a citrus zester if desired)
  • ½ teaspoon minced garlic
  • ¼–½ teaspoon crushed red pepper flakes, to taste
  • 1 teaspoon sesame seeds
  • 3–4 green onions, thinly sliced

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Line a rimmed baking sheet with foil and lightly spray with non-stick cooking spray.
  3. Place the salmon fillets on the prepared baking sheet, skin side down if present, and season lightly with salt.
  4. In a small bowl, combine orange marmalade, soy sauce, sesame oil, grated ginger, garlic, and crushed red pepper flakes.
  5. Spoon half of the glaze over the salmon fillets and bake for 10 minutes.
  6. Coat with the remaining glaze and continue baking for 5–7 minutes, or until salmon flakes easily with a fork.
  7. Garnish with sesame seeds and sliced green onions. Serve over rice with your choice of vegetables.
