Ingredients:

  • 16 ounces Italian sausage (see note)
  • 1/2 small onion, finely chopped
  • 4 cloves garlic, minced
  • 1/3 cup dry white wine (e.g., sauvignon blanc)
  • 1 (14-ounce) can diced tomatoes with juices
  • 1 cup heavy/whipping cream
  • 1 pound uncooked potato gnocchi
  • 1/2 cup freshly grated parmesan cheese
  • Handful fresh basil, torn
  • Salt & pepper to taste

Instructions:

  1. In a large skillet, sauté the sausage and onion over medium-high heat for 7-10 minutes, or until the sausage is lightly browned.
  2. Add the minced garlic to the pan and sauté for an additional 30 seconds.
  3. Pour in the white wine and cook for about 1 minute, letting it reduce slightly.
  4. Stir in the diced tomatoes with juices, heavy cream, and uncooked gnocchi. Once the sauce begins to bubble, cover the skillet and reduce the heat to medium. Let it simmer for 5 minutes.
  5. Uncover the pan, stir everything well, and cook for a few more minutes until the gnocchi is soft and fully cooked, and the sauce has thickened to your liking.
  6. Stir in the freshly grated parmesan cheese and torn basil leaves. Season with salt and pepper to taste. Serve immediately.

Tips

  • Use high-quality Italian sausage for the best flavor. You can use sweet or spicy sausage, depending on your preference.
  • If you prefer a lighter version, you can substitute the heavy cream with half-and-half or a lighter cream.
  • Be sure to cook the gnocchi until they float to the surface for the best texture.

Variations and Substitutions

  • For a vegetable boost, add spinach, kale, or mushrooms to the dish while sautéing the onions and sausage.
  • You can substitute the gnocchi with another type of pasta if you don’t have gnocchi on hand.
  • If you don’t have white wine, chicken broth or vegetable broth works as a substitute for a similar depth of flavor.

FAQs

Can I make this recipe ahead of time?

  • While this dish is best enjoyed fresh, you can prepare the sausage and onion mixture in advance, then just add the gnocchi and sauce when ready to finish the dish.

What if I don’t have white wine?

  • If you don’t have white wine, you can substitute it with chicken broth or vegetable broth, or leave it out and use extra cream for richness.

Serving Suggestions

Serve this creamy gnocchi with sausage alongside a simple salad of arugula and lemon vinaigrette for a balanced meal. A slice of crusty bread is also great for soaking up the delicious sauce. Top with additional parmesan cheese for an extra burst of flavor.
