Instructions

  1. Preheat the oven to 350หšF (175หšC). Line two rimmed baking sheets with parchment paper.
  2. In a stand mixer fitted with a paddle attachment, combine the softened butter, brown sugar, and granulated sugar. Mix on medium speed for 3-4 minutes until light and fluffy.
  3. Scrape down the sides of the bowl and add the egg and vanilla extract. Continue mixing for 1-2 minutes until fully combined.
  4. Add the flour, cinnamon, baking soda, and salt to the bowl. Mix on low speed for 30 seconds, or until no streaks of flour remain.
  5. Stir in the rolled oats, dried cranberries, and white chocolate chips, mixing on low speed for about 1 minute until evenly distributed.
  6. Using a 1.5-tablespoon cookie scoop, drop dough onto the prepared baking sheets, spacing them about 3 inches apart. You should have approximately 12 cookies per sheet.
  7. Bake for 10-12 minutes, or until the cookies are golden brown around the edges. Immediately after removing from the oven, press a few extra cranberries onto the tops of the warm cookies.
  8. Let the cookies cool on the baking sheets for 5 minutes, then transfer them to a cooling rack to cool completely.
