Instructions

  1. Preheat the oven to 325°F (165°C). Grease two 9×5-inch loaf pans or eight mini loaf pans with nonstick cooking spray.
  2. In a small bowl, combine the sugar and cinnamon for the topping. Set aside.
  3. Sprinkle half of the cinnamon sugar mixture evenly over the bottoms and sides of the prepared pans.
  4. In a large mixing bowl, whisk together the buttermilk, oil, eggs, and vanilla extract until smooth.
  5. Add the sugar, cinnamon, baking powder, baking soda, and salt. Stir until well combined.
  6. Gradually mix in the flour and instant vanilla pudding mixes, stirring until a smooth batter forms.
  7. Fold in the chopped walnuts, if using.
  8. Divide the batter evenly among the prepared pans.
  9. Sprinkle the remaining cinnamon sugar mixture over the tops of the batter.
  10. Bake for approximately 45 minutes for mini loaves or 55–65 minutes for full-size loaves, until a toothpick inserted in the center comes out clean.
  11. Allow the bread to cool in the pans for 10–15 minutes before transferring to a wire rack to cool completely.
