  3. Increase heat to medium-high and add ½ tablespoon olive oil. Add the mushrooms, ¼ teaspoon salt, and black pepper. Cook for 5–7 minutes, stirring occasionally, until the mushrooms are browned.
  4. Pour in the chicken broth and bring to a simmer.
  5. Remove from heat and stir in the heavy cream, sour cream, remaining ¼ teaspoon salt, and dried rosemary until combined.
  6. Place the uncooked rice in a 4×6-inch or 5×5-inch baking dish.
  7. Pour the mushroom sauce over the rice and stir gently to combine. Place the baking dish on a rimmed baking sheet to catch any spills.
  8. Cover tightly with foil and bake for 40 minutes, or until the rice is tender and the casserole is heated through. Serve hot.
