Ingredients

  • 1 cup butter, softened
  • ½ cup powdered sugar (plus extra for rolling and sprinkling)
  • 1 tablespoon water
  • 2 teaspoons pure vanilla extract
  • 2 cups all-purpose flour
  • ½ teaspoon salt
  • 1 cup finely chopped pecans

Instructions

  1. In a large mixing bowl, use an electric mixer to cream together the butter, powdered sugar, water, and vanilla until light and fluffy.
  2. In a separate bowl, combine the flour and salt. Gradually add this dry mixture to the creamed butter mixture, mixing well until it forms a coarse, crumb-like dough.
  3. Stir in the chopped pecans using a wooden spoon. Cover the bowl with plastic wrap and chill the dough for 1 hour.
  4. Preheat your oven to 250°F (120°C).
  5. Form the chilled dough into 26–28 balls, about 1 inch in diameter, and place them 1–2 inches apart on an ungreased baking sheet.
  6. Bake for 55–60 minutes, or until the bottoms are lightly golden. Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  7. Place ¼ cup powdered sugar in a small bowl. Roll the cooled cookies in powdered sugar until coated. For an extra touch, sprinkle with additional powdered sugar before serving.

Tips

  • Chilling the dough is essential for the cookies to hold their shape during baking.
  • Use finely chopped pecans to ensure even distribution in each cookie.
  • Baking at a low temperature allows the cookies to bake slowly, giving them a delicate, melt-in-your-mouth texture.

Variations and Substitutions

  • Nuts: Swap pecans with walnuts or almonds if preferred.
  • Gluten-free: Use a gluten-free flour blend instead of all-purpose flour.
  • Flavor twist: Add a pinch of cinnamon or nutmeg for a warm, spiced flavor.

FAQs

Q: Can I make the dough ahead of time?
A: Yes, the dough can be refrigerated for up to 2 days before baking.

Q: Can I freeze the dough?
A: Absolutely! Shape into balls and freeze on a baking sheet. Once frozen, store in an airtight container for up to 2 months. Bake straight from frozen, adding a few extra minutes to the baking time.

Q: Why are my cookies crumbly?
A: Pecan Sandies are naturally delicate. Be gentle when rolling and transferring them. Overmixing can also make them denser.

Serving

Serve these cookies with a cup of coffee, tea, or hot chocolate. They are also perfect for holiday cookie trays, gift boxes, or as a sweet snack anytime.

Suggestions

  • Pair with a scoop of vanilla ice cream for a decadent dessert.
  • Decorate with a drizzle of melted chocolate for a festive touch.
  • Store in an airtight container at room temperature for up to a week, or freeze for longer storage.
