  • ⅓ cup chopped cilantro or fresh Italian parsley

Dressing:

  • ½ cup extra virgin olive oil
  • ¼ cup apple cider vinegar
  • Juice of 1 lime
  • 2 tablespoons granulated sugar (or 3 tablespoons for a sweeter dressing)
  • 1 teaspoon minced garlic
  • ½ teaspoon salt (plus extra to taste)
  • ½ teaspoon cumin
  • Freshly ground black pepper, to taste

Instructions

  1. In a large bowl, combine the white beans, chickpeas, black beans, corn, red onion, bell peppers, and jalapeño.
  2. In a small mason jar or bowl, mix together all dressing ingredients. Shake or whisk until fully combined.
  3. Pour the desired amount of dressing over the salad and toss well to coat all ingredients.
  4. Sprinkle with chopped cilantro or parsley and toss again.
  5. Cover and refrigerate for at least 2 hours before serving to allow flavors to meld.
  6. Store leftovers in an airtight container in the refrigerator for 4–5 days.
