  • 8 large eggs, whisked
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons butter
  • ⅓ cup diced onion (white or yellow)
  • ⅓ cup diced bell pepper (red or green)
  • ½ to 1 jalapeño, seeded and diced (optional)
  • 1 roma tomato, finely chopped

Cheese and Herbs

  • ¼ cup shredded sharp cheddar cheese
  • ¼ cup shredded Monterey Jack cheese
  • 2 tablespoons cilantro leaves, torn or chopped, divided

For Serving

  • 15 ounces canned black beans, drained and warmed
  • 3–4 flour tortillas, toasted, or corn tortillas for gluten-free option
  • 1 large avocado, sliced

Optional Garnishes

  • Green onions, sour cream, salsa, pico de gallo, or hot sauce

Instructions

  1. Prepare the Eggs: Whisk the eggs in a bowl and season with salt and pepper. Set aside.
  2. Cook the Vegetables: Melt butter in a large nonstick skillet over medium heat. Add onion, bell pepper, and jalapeño. Add tomato, season lightly with salt and pepper, and sauté 1–2 more minutes until slightly softened.
  3. Cook the Eggs: Reduce heat to medium-low. Pour the eggs into the skillet. Using a wooden spoon or spatula, gently fold the eggs over until cooked through, about 4 minutes.
  4. Add Cheese and Cilantro: Sprinkle the cheeses and 1 tablespoon of cilantro over the eggs. Stir gently until cheese is melted and incorporated. Remove from heat.
  5. Garnish and Serve: Top with remaining cilantro and sliced avocado. Serve with warmed black beans and toasted tortillas on the side. Add optional garnishes such as green onions, sour cream, salsa, or pico de gallo.
