I recently published a recipe for Mexican Chorizo|Homemade. I’m not sure if you’re curious about what I’m going to do with the chorizo. Chorizo with Papas, or chorizo with potatoes, is one of the most simple, traditional, and delectable chorizo recipes.
Ingredientes:
- 1 teaspoon olive oil
- Mexican Chorizo (200–250 g)
- 1/2 onion, chopped
- 1 garlic clove (minced)
- 3 medium potatoes, peeled and diced into small pieces (red, white, or yellow)
- Cumin, a pinch
- Season with salt and pepper to taste.
In a medium skillet over high heat, cook the Mexican Chorizo for 5–7 minutes, then transfer to a bowl and set aside.
Add a teaspoon of olive oil to the same skillet over medium heat (or any oil of your taste)
Cook, stirring regularly, for about 10 minutes or until potatoes are tender, adding chopped onion, minced garlic, and potatoes (cut into small cubes).
If the potatoes are too hard, add 1/4 cup water and simmer for another 10 minutes on high-medium heat.) Stir in the cumin.
Return the cooked Mexican Chorizo to the skillet, stir to combine, and season with salt and pepper.
NOTE: Add eggs if you want!! You may make Huevo with Chorizo y Papas (Eggs with Chorizo and Potatoes) whichever you want.
